Twice Baked Potato Casserole

This is YUM-O. i'm making it tonight, along with some ribs.


 



2 Large Baking Potatoes 
4 oz of cream cheese 
4 oz of sour cream 
Salt/Pepper to taste If you want add garlic too 
2 Tablespoons of Real Butter 
1 Cup of Shredded Cheese




  •         Get the LARGE Baking Potatoes - Bake in the microwave till almost done but not done or overdone as you will be baking in the oven a little later 

  •         Cut lengthwise – Scoop out the potato leaving the skin & a thin layer of potato also known as the “shell” 

  •         Mix the scooped out potato with an electric mixer if you don’t have one just make sure the sour cream & cream cheese are mixed well with the potatoes 

  •         Add the salt & pepper to tatste (& if you want garlic) 

  •         Take ½ cup of the shredded cheese & fold in the potato mixture 

  •         Spoon an equal amount into each potato shell 

  •         Bake for about 25 minutes @ 325 degrees 

  •         Add the remaining ½ cup shredded cheese on the top of each potato 

  •         Put back in oven & melt
