How to Preserve the Top Tier of your Wedding Cake

You have gotten through months of planning for your big day, you’ve had the wedding of your dreams, but now it’s time to look to the future. Many couples opt for saving the top tier of their wedding cake to enjoy together on their one-year anniversary. However, like anything placed in the freezer, the shorter amount of time it’s in there, the better it will taste. For the best results, set a new standard and opt to indulge the night you get back from your honeymoon or on your one-month anniversary together. The tradition, which is said to have started in England, was less complicated to do when cakes were made with easier to preserve ingredients. The delicate versions we have today can still be indulged at a future date to enjoy all those delicious memories, if you take the proper steps to ensure the cake is intact and edible.


 


The most important thing to remember when saving your top tier is to tell the caterer (or whoever is serving the cake) that you want to keep it. If you don’t, the cake could get tossed after the reception or served to guests to eat.


 


At the Culinary Institute of America at Greystone in Napa Valley, special events pastry chef Laura Wilcox says the best method to preserving the top tier of the wedding cake is to first wrap the cake in plastic wrap and then in foil.  “Thaw it in the refrigerator the day before you plan to eat it, then bring it to room temperature before enjoying,” says Wilcox. “Also, if a couple plans to save the top tier, make sure the baker knows so they can leave out ingredients that are more perishable, like berries in the filling."


 


As the bride, you’ll be busy enjoying your day and mingling with guests, so be sure to appoint one of your bridesmaids or a family member to be in charge of assuring the cake gets taken home and is wrapped properly.


 


If the cake has to endure a bumpy ride before it gets safely to your freezer, try lining the bottom of a plastic container with mini marshmallows and then putting the wrapped cake on top of those marshmallows. Pour more marshmallows around the sides of the wrapped cake and on top; then cover with the lid to the plastic container. The marshmallows will add cozy padding to your keepsake. Before you place the cake in the freezer, be sure to mark the container with a note or a ribbon (perhaps from your bouquet or a centerpiece) so that it won’t get thrown out accidentally.


 


When the time comes to enjoy your hard work and preparation, remove the container from the freezer and thaw in the refrigerator. If your top tier doesn’t make it home or you’d rather enjoy a fresh version of your wedding cake, try contacting the baker who originally made the dessert, chances are, he or she would be happy to recreate a tier in the same flavor as the original for a small fee.
