Hi ladies! Just wanted to pass on these directions that I followed to keep our top tier for one year. This was given to me by our wedding cake baker:
Wrap box in 2 layers of plastic wrap then 2 layers of heavy duty aluminium foil. (the cake itself was not wrapped just placed inside the box)
The day before you plan to eat it, take box (still wrapped) and place in refrigerator over night.
Four hours before you plan to eat it, unwrap box and place box back in fridge.
Two hours prior to eating, take cake out of box and leave at room temp.
I was a little scared to eat 1 year old cake but....
it still looked soooo pretty and tasted soooo good! The icing tasted exactly the same and the actual cake didn't taste 'fresh' but tasted like it was made a day or two prior.
I'm so glad we decided to do this! It was an awesome end to a fab weekend of celebration.
