So, I just finished filling out my paperwork today and I start my job next week. Which led me to thinking about what to take for lunch.
Any of you ladies have any different recipes (healthy preferred but not required) for lunch other than the typical sandwich? I want to be excited to eat lunch, not dreaming of going to the Wendy's, lol. I have access to a fridge as
well as a microwave, if that helps.
I make lots of sandwiches, but spiced up. My favorite is Prosciutto and Brie with fig jam on spicy greens. I slice up a sourdough baguette and spread some fig jam on it. Then I add brie, a few slices of prosciutto, and some greens.
I also make myself bruschetta a lot. I slice up a good loaf of bread and toast it. Then I rub garlic on the toast and drizzle some olive oil. Next, slice up heirloom tomatoes and add a slice to each piece of toast. Top it off with fresh
mozzarella, basil, and a pinch of sea salt. It's delicious and so fresh!
