DH and I hosted our first weekend brunch today! Thanks to my gluten/dairy/egg allergies, brunch is a challenging meal to make, so I'm happy it went well.

What are your favorite brunch recipes?

Here's one from our brunch today. . .

Peanut Butter and Jelly Bars

(I made some mods for my allergies with almond flour, soy butter, and a flaxseed mixture for the egg. Also increased the peanut butter and jelly amounts a bit).

are you looking for only celiac-friendly recipes?  i don't have any of those...

i like to make an egg and sausage casserole...it can be prepared the nite before then baked in the morning.....

Ooh, do share! Even if recipes use ingredients I can't eat, I like the challenge of revamping them to work with my allergies.

cool!  i love that you put it together the nite before then just bake in the morning!  its so good!  and really filling...we usually don't end up eating any lunch when we have this!  and it pretty much lasts all week for breakfasts!

For brunch, I love:

  • tomato with mozzarella and basil
  • melon with Serrano ham
  • dates with cream cheese filling
  • puff paste filled with cheese and ham
  • waffels

I'm waiting for some asiago cheesy hash browns to bake. They are our fav thing on the brunch menu @ a local restaurant chain and we really don't want to pay $20 per person to have them. I googled asiago cheesy has browns and the first recipe from allrecipes is the one that we use. They are not healthy- a lot of cheese, stick of butter, and heavy cream- but they are yummy.
