CHILI CHILI CHILI...

If any of you would like to share your fabulous chili recipes that would be marvellous! I've been looking for one that is not spicy, but if that's all you have that's great, I can just take out whatever is spicy.

I have won several work chili cook offs :)  You could cut this in half if you want but I like to have leftover for lunches and late night snacks :) 

My secret I think is the bacon I add it gives a great flavor and I cheat on the seasoning by using Chili seasoning prepackaged in a little packet ....Ive tried a lot of different recipes and using the packaged "chili seasoning "  I think gives much better flavor than the recipes that call for chili powder

Ingredients

1/2 to 1 lb of bacon

2 lbs of ground beef

2 packets of McCormick (or other brand) chili seasoning

1 large onion  chopped

2 bell peppers (I prefer a yellow and a red)  chopped

2 cans diced tomatoes (I prefer the Hunt's Fire roasted )

1 can red kidney beans

1 can light colored kidney beans

1 can of "chili beans"  (if you can't find this just use another can of kidney)

1 to 2 cans of plain tomato sauce (I like thick chili so I use 1 can but if you like it soupier use more)

Directions

Fry bacon

Drain MOST of the grease but leave enough to coat the pan , throw in the chopped peppers saute for a few minutes , then add onions , saute a few more minutes until soft, add in ground beef , season with garlic powder , salt and pepper to taste, and then  1/2 a packet of chili seasoning and cook through .

Add ground beef mixture and all other ingredients including the bacon crumbled up or broken in to small pieces  to a large pot or crock pot .... simmer on stove top on low for an hour  or in a crockpot on low for 3 hours ....serve with sour cream , shredded cheese , Italian Bread and/or saltine crackers  and ENJOY

I don't think I've ever had chili with bell peppers, so that's interesting to me. I LOVE to put shredded cheddar in my chili and use saltine crackers to dip in it YUM!

i'm actually looking forward to the cold weather so we can make nice big pots of chili, soups and stews!

If anyone tries it ... please let me know what you think :) 

Also another tip - the pre-packaged chili seasonings come in mild , medium , or hot  so you can customize it to your tastes that way

I always buy mild if I have the choice-my taste buds don't handle hot things too well. I've actually never made chili at all, so I'm definately trying this when we get cool weather = )

I haven't tried it, but it is almost identical to my FIL's recipe for deer chili (except for the deer vs. beef, of course), and I love, love his chili!!
