Christmas candy

So the Christmas cookie post got me thinking... I don't make Christmas cookies, but my mom and I make Christmas candy every year.  We make fudge (the receipe on the marshmallow creme jar), peanut butter balls, and coconut balls.  Anybody else make candy?

Peanut Butter Balls

1 cup butter (2 sticks)

2 cups peanut butter

1 ½ tsp vanilla

1 ½ to 2 lbs of powdered sugar

½  block of canning wax

1 ½ packages of milk chocolate chips

 

Soften butter, then add peanut butter and cream together.  Add vanilla and mix well.  Mix in powdered sugar a little at a time until dough is no longer sticky and can be formed into balls.  Form dough into balls.

Melt wax in double boiler.  Add chocolate chips and melt.  Dip balls into chocolate and put on wax paper until hardened.

COCONUT BALLS

makes 70-90 depending on size, and will stay good for about 2 weeks if in a sealed container stored in a cool/dry place

 

For the inside:

1 stick unsalted butter

2 tsp vanilla OR 1½ tsp each Kahlua & Bailey’s Irish Cream

2 lbs powdered sugar

4-8 tbl heavy whipping cream

1 cup coconut

1 cup pecans

 

For the outside:

2 pkgs semi-sweet chocolate chips

2/3 bar of canning wax

1-3 cups coconut

1-3 cups pecans

 

 

For the inside:

Combine 1 cup each coconut and pecans and finely chop in food processor.  In mixer combine butter and vanilla or Kahlua & Irish Cream.  Add powdered sugar and mix on low until well mixed.  Add whipping cream 2 tbl at a time until the mixture is moist and can be formed into balls.  Add coconut and pecans from food processor.  (I have to switch to the dough hook in my mixer when I add the coconut and pecans.)  Roll into balls.

 

For the outside:

Melt 2/3 bar of canning wax in a double boiler over low heat.  Add 2 pkgs chocolate chips and heat until chocolate is melted. 

 

Combine 1-3 cups each coconut and pecans and finely chop in food processor.  (I do 1 cup each at a time and add more as I run out.)

 

Dip the balls into chocolate and roll into the coconut/pecan mixture.

I really haven't made candy before, but maybe I should try out one of your recipies on my Christmas cookie baking day = ) candy and cookies go together right? ; )

 These are really good and real easy - 

Chocolate Truffles

 3 (6oz)pkg.semi-sweet chips
 1 (14oz)can CONDENSED milk
 1 Tbsp vanilla
  Finely chopped nuts, flaked coconut, chocolate sprinkles, colored sprinkles, unsweetened cocoa, or colored sugar

  In heavy saucepan over low heat, melt chips w/condensed milk. Remove from heat;stir in vanilla.
Chill 2 hours till firm. Shape into 1" balls;roll in any coating wanted. Chill 1 hr till firm. Store covered, at room temp.       Makes about 6 doz

You could make this anytime, but I always make a bunch for people at Christmas time! Everyone loves it! It's basically toffee, chocolate, and nuts layered on top of each other!

1 stick butter

3/4 c of b sugar

1 c pecans ( crushed in food processor but I've used crushed walnuts also and it's good)

2 c choc chips (I use milk chocolate, but you could use any kind)

Boil sugar and butter 7 mins on low-medium. I used high the first time and burnt everything and set off the fire alarm lol!

Pour on top of nuts in 8x8 pan.

Put choc chips on top and let melt. Make sure to spread the chocolate all over the top of the nuts and brown sugar mixture.

Refrigerate for several house, cut up the candy and enjoy!!
