chicken with sesame noodles was yummy as well!  i was actually able to skip a step because i had some leftover shredded chicken from yesterday that i was able to use in this dish.

and by the way, the tortilla casserole was even better the next day! (yes, even tho it was supposed to be only two servings, i still made too much and ended up with leftovers....)

so far, i really recommend this cookbook!

I need to find this book!  My friend gave me a Cooking for Two by Jessica Strand (I think there are several of these books out there by diff authors), but I can only eat about 1/3rd of what's in the book (not counting dessert).  I def want to try out some of the recipes though.  They seem to be a bit on the more gourmet side (Seared Scallops on a Bed of Fresh English Pea and Mint Puree... sounds totally delicious so I'll have to def try it some time.. when I have more time to cook. lol).

meocat - look for this one in the magazine section of barnes & noble! i really love it so far. and there's a good variety of recipes - italian, korean, chinese, comfort food, desserts...
