Overnight Mexican Roast
1 chuck roast
1 potato, finely diced
1 packet of taco seasoning
1 small can of chopped green chiles
1 medium jar of picante sauce
Tortillas
Grated cheese
Before you go to bed, place roast in crockpot. Cover with taco seasoning, green chiles, picante sauce, and potato. Set the crockpot on high and cook it overnight. The next morning stir it with a fork to mix the meat mixture.
Set the crockpot on low and cook until it's time for dinner. Shred it before serving, then fill a tortilla with meat and add cheese. It's delicious, fragrant, and FILLING! The leftovers are even better.
