I decided to try something new this weekend and made a meal with curried chicken, jasmine rice with coconut milk, and naan. It was so yummy! I was afraid DH wouldn't like it because he had never eaten Indian food before, but he loved it and even helped me to make the naan.

Has anyone else tried something totally new recently?

I made chicken tikka last night - an Indian dish!  It was good and super healthy (just spices, peppers, tomatoes, garlic, ginger, and chicken) served with whole grain rice.

I also recently tried a balsamic reduction asparagus pasta that I found on Pinterest.  It wasn't bad, but not great either so I deleted the recipe.

What recipe did you use for naan?  I'd love a homemade recipe, if possible!

Yay LadyHope!! Thanks for this, I love curry. I found a recipe for onion bhajis but have never thought to make my own naan...I'm trying this at the weekend....

It was a lot easier than I thought. My last attempt at something with yeast wound up burned beyond all recognition. ;) This came together really easily, though!

I LOVE curry. I kind of made up my own recipe which combines classic Trini chickpea/potato curry and Thai massaman. Here's the recipe, for anyone interested!

Curry

1 Tbs. olive oil

1 small onion, chopped

1 can coconut milk

4 small potatoes, chopped into large chunks (I like using red potatoes)

1 can garbanzo beans, drained and rinsed

2 Tbs. curry powder

1-2 C water

1 package tofu, cooked based on fried tofu recipe (below)

 

  1. Heat olive oil in a large skillet over medium-high heat, sautee onion until translucent
  2. Add can of coconut milk, potatoes, garbanzo beans, and curry powder. Stir and then let it come to a simmer, adding water as needed (when the sauce starts to get thick; this curry should be soupy)
  3. Once the potatoes begin to get soft (but still have a little crispiness), add tofu and continue to simmer.
  4. Cook until potatoes are completely soft.

Tofu

1 package water-packed tofu

3 Tbs cornmeal

1 Tbs garlic

1 Tbs cumin

1 teaspoon water

1 Tbs olive oil

 

  1. Cut tofu into long, skinny chunks (I usually cut once through the depth of the block, once through the length of the block, and multiple times through the width of the block to achieve chunks that are roughly .75" wide, .75" deep and 1.5" long.
  2. Put into a large tupperware container (with lid), sprinkle the cornmeal, spices and water over the top. Put the lid on the container, and shake gently, allowing the mixture to coat the tofu.
  3. Heat the olive oil in a medium skillet over medium-high heat. Add half of the tofu. Fry the tofu in the hot oil, being sure to get all of the long sides. Fry the other half of the tofu.
