I think you need to decide if you want a choreographer or an instructor first. not all do both, some are very traditional.

we're taking dance lessons with Kayla at Arthur Murray in Redwood City and love her. I think they also have a Livermore place too. We have a package as FI really likes dancing and we wanted to do more than just our first dance but they have a great program and it has been really fun and quick to pick up. I think they will also just do a few a la carte lessons if you wanted or were on a budget.
