Great Potato Recipes - SHARE!

I've yet to make scalloped potatoes that didn't require at least 2 hours of baking despite the 'one hour' on the timer.  Ugggh.  So I went searching for a new potato recipe and found a much simpler, and TASTIER version - you have to try it, it's awesome. 

That said. . .post YOUR favorite potato recipe! ! ! !

CHEESE and CHIVES Potatoes

I used cubed red potatoes and also added a tablespoon of plain yellow mustard - lots of salt and pepper - extra chives :)  I didn't have dried onion. . .it came out fine without it.

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

  • 4 cups cubed potatoes
  • 1 teaspoon salt
  • 1 cup milk
  • 1 (8-ounce) package cream cheese, softened
  • 1 tablespoon chopped chives, fresh or frozen
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon instant dried minced onion
  • paprika
  • fresh or frozen chopped chives for garnish(optional)

Preparation:

Cook potatoes with 1 teaspoon salt in boiling water to cover 15 minutes or until tender; drain. Place cooked potatoes in a shallow, lightly greased 2-quart casserole. Heat milk and cream cheese in a medium saucepan, stirring until cheese is melted. Add chives, salt, pepper, and dried onion; pour over potatoes. Bake, uncovered, at 350° for 30 minutes. Sprinkle with paprika and more chives, if desired.
Cheese and chives potato casserole serves 4 to 6.

Potatoes my husband makes :)

dice potatoes and throw in a baking pan with chopped onion

season them to death with salt pepper and garlic powder :)

drizzle a generous amount of EVOO over potatoes and mix  it up

Bake at 350 with the pan covered in foil for about 30 minutes or until potatoes are soft ... then bake with foil off until nice and brown 

We love these in my house

these sound so good! I love just making good old fashioned mashed potatoes.

Just peel and cube potatoes

Boil until tender

Add milk/butter/sour cream to taste and mix it with a hand mixer until it is pretty smooth, but I like it still a little lumpy

I learned from Alton Brown (food network) that yukon gold are best for mashed potatoes (something about the starch content)

I have 3,456,821 different ways to make potatoes.....grew up on a potato farm.  Which ones would you like?  HA HA!

i only eat and make good ole fashioned mashed potatoes!  yukon gold is the best!

Lately I've been on a garlic potato kick.  My current fave is cubing potatoes and roasting them with split garlic heads, the whole thing drizzled with olive oil and salt/pepper (with a lil cayenne and paprika).  When they're done roast, squeeze out the garlic smash it up a bit with a potato masher, but don't turn it into mashed potatoes.  Yum!
