I can't find my guac recipe!!! It has obviously been misplaced between the UK and here.

Can anyone help me with a good one? I found loads online, but I'd rather get a recommended one from you lovely ladies!!

I used to follow the Chevy's recipe (it's a Mexican restaurant in the US).  I am now at the point where I just eyeball everything.  I generally inclulde: avocado, tomatoes, onion, garlic, lime juice, olive oil, salt, pepper.

I work in a Mexican restaurant where we prapare guacamole at the table for our guest. 

1 tablespoon diced onion, 1 tablespoon cilantro, Diced serrano peppers (1/2 tablespoon for mild, 1 tablespoon for medium, 2 tablespoons for hot), 1 tablespoon orange juice, and 1/4 teaspoon salt.  Mash this all together til the onions are clear. 

Add in 2 avocado and mash to the constitancy you want.  Mix in 2 tablespoons diced tomatoes.
