Grits and other hot cereals; chicken-skin removed and cooked in liquid, then cut in small pieces; fish -boned and skinned, cooked just until done in liquid, finely chopped. Soft scrambled eggs, quiches, mashed beans/peas; hummus, soft cooked
vegetables, then finely chopped. Also remember to include smoothies, some of the professional liquid nutrion drinks, like Ensure to keep your grandfather's caloric intake high. Puddings, bananas, cooked apples or applesauce, cheese
slices are great snack choices too.
Menu ideas:
Baked or mashed potates served with gravy w finely minced meat(remember to cook the meat with liquid, no fried or broiled, it would make the meat exterior hard).
Mashed sweet potatoes with spinach (or turnip greens) and soft cooked black eyed peas.
Spaghetti with ground meat sauce.
Cheese and spinach quiche.
Seafood chowder in a broth or cream base.
Lightly cooked french toast with baked apple slices.
Your grandfather may be able to eat crackers and lightly toasted bread, as he may be able to gum them and make them soft. Good luck. Your grandfather is fortunate that he has you and your sister caring about him.
