HELP! Need Ideas on Food!

I'm having such a hard time figuring out food! We're having a 1-hour cocktail hour and I'd really like to do a sit down dinner, but I'm open to suggestions.

We'd really like Lowcountry/Cajun, Pan Asian, and/or Comfort food. Our caterer seems to really understand that we're big on presentation and he's currently trying to work up a proposal for us, but I'd like some input from you talented and creative ladies.

We don't have a huge food budget 4k for everything (including servers and plates, tableware, etc.) with an estimated 85 people in attendance. So anything we could dress up in presentation would be great. Our wedding theme is Modern Rocker Chic, if that helps.

For our cocktail hour we had the basics; cheese / fruit / meat tray / but the one everyone seemed to really love was the Candied Salmon.

Its actually super delicious and we had two different flavors regular and teryiaki. If you haven't heard of it before here is a recipie I just found on google.
