All these recipies have got me thinking-how do you store your potatoes to keep them from going bad? I read online that if you store them properly they will keep up to a month, but I notice mine start to grow sprouts and begin to get soft at about a week. I usually just leave mine in the bag they come in, and put it them in the pantry.

Am I doing something wrong?

If you are, then I am too. I do the same thing. I usually only buy what I need for 2 weeks though, so they get used up pretty fast. Ive always heard a cool, dark place.

I only buy them if I know we're making a potato recipe that week.  It's so dry here in Colorado they take a while to sprout - remember if you DO get sprouts go ahead and eat them but cut out a good chuck where the sprout was - I think it has some kind of toxin in it if I remember correctly.

Sometimes I keep them in the oven drawer.

hmmmm, the drawer I have them is near the oven, so maybe I should move them to a place where it's not as warm?
