Long weekend surprise!

DH and I got back yesterday from a long weekend at the river. When we left Friday, I had a few small zucchini and squash on the vines, as well as some tomatoes that were starting to color. This is what I harvested when we got home (sorry for the phone pics):

Yes, that one on the left is about the length and size of my calf - it's huge!! It was hardly there on Friday!

I think I'll find some kind of roasted stuffed zucchini recipe for this one, but I'm on my own eating it since DH isn't a fan. Lol. But I've still got a couple from last week that need to be eaten too, so I'm working on finding uses for all of them.

I have discovered that they work really well in my juicer when combined with apple and carrots. The flavor is so mild, you don't even realize there's another veggie in there!

Wow! I can't believe you have veggies already!! I JUST planted my tomato and pepper plants on Friday now that we are out of danger for a hard freeze!!!

hm... those zucchini  chips sound amazing!   I'm jealous of your harvest too!  We're just starting off...lol.

Meh... We had a headstart :) This is Florida, after all! You guys probably have much better soil though!

Thanks girl, but truthfully, zucchini grows itself! Haha - I swear. Buy a seedling from Lowes and put it in the ground (it will tolerate just about any soil) - you'll see what I mean! :) Just give it plenty of room to spread out, b/c they're HUGE.

after i saw all your posts about your veggies, i've been talking about it non-stop with DH.  i want to do it so bad but kinda scared i will fail, lol.  i will take baby steps.  i want to grow basil & tomatoes sooo bad that way i can make tomato, mozzarella cheese and basil ... my favorite!

I know what you mean about being afraid of failure - this is why I started slowly last fall! I started with herbs and lettuces (lettuces grow well in cooler temps) in containers. But I was ready to get some tomatoes in the ground this spring! Tomatoes seem tougher to grow than some other things, so definitely read up before you start those (theres a "tips" thread in this group for tomatoes, btw). But I don't think you can fail with zucchini, so if you like it, now's the time to plant!
