Make Ahead Dinners?

So Ladies - I need an arsenal of Make Ahead Dinners, my co-worker just got fired, and now I'll be covering the office by myself.  =(  Which means 50-60 hours per week for at least a month.  DH doesn't mind cooking, but he prefers pre-packaged food.  Blech.  I'd like to have a big cooking day on Sunday, to make a bunch of stuff, that he can just thaw/re-heat when I'm leaving the office.  Any Suggestions?

chili or stew is great to make big batches up ahead of time and put in the freezer....great for winter time too!

stuffed shells

lasagna

stuffing for stuffed bell peppers (then stuff the bell peppers and bake)

Casseroles, Chili, soups/chowders are all good. If you have a crockpot, you can throw something in before you leave and it's done when you get home.

This is good to make ahead. Well, make the chicken/sour cream/cream of chicken mixture ahead of time and freeze it. Than all he has to do is sprinkle the crushed crackers and butter on top before popping it into the oven
