How about a seafood casserole?
Bring to a boil:
1 can cream of mushroom soup
1 c milk
1/4 c butter
1 small pkg. froz small pearl onions
In casserole dish, gently stir
2 c lobster
1 c crab
Sprinkle seafood with 1/2 c chopped green pepper, add salt and pepper to taste. Sprinkle crumbled crackers (I use Ritz) over top. Add a layer of sharp cheddar cheese on top, then pour soup mixture over all.
Bake, uncovered 20 - 40 minutes in 400 degree oven, until hot bubbly. Allow to set 10 - 15 minutes before serving. This makes a beautiful, easy and delicious dish. Serve with a green salad and hard dinner rolls.
To make cost effective, flounder, halibut or shrimp (or your favorite mild seafood) can be added to stretch.
