cook for 1? During a deployment or anything? ...My husband is gone and i'm finding it so hard to cook for just myself and not spend too much or waste too much food.

any favorite recipes for yourself?

my favorite meals include chicken or steak I lived alone for a while so I learned pretty quickly to cook for myself with minimal leftovers. chicken and yellow rice is easy to make and really good.

1 chicken breast

1 box of yellow rice (I use Goya)

boil chicken in 1/2 water 1/2 chicken broth until done.

remove chicken from water and add apropriate amount of rice let cook until done.

once the rice is done cut chicken up and mix.

using the broth to cook the rice adds flavor to it.

chicken and pasta is easy to make for one as well.

Haha, i'm the opposite right now. I've been living away from my fiance for 2.5 years and I"m moving this week to be with him, so now I need how to go from cooking for one to cooking for two (or rather three or four depending on how hungry he is!).

I need to start with- I can't cook.

But I lived on my own in law school, so I always cooked for myself. Any kind of casserole cannot really be made for 1. Pasta is super easy for 1. I always buy packages of 3 chicken breasts, leave 1 out and freeze 2, that way you don't have to eat it every day and it doesn't go bad.

Tacos or other mexican food is easy for 1- just prepare enough chicken or meat for 1.

Buy small quantities of lunch meat- I always ask for the number of slices I want. Yes, they look at me funny, but that way I don't waste it.

I love Lean Cuisine too- I eat like 1 a week.

Fruits and veggies are the hardest, because you have to eat so much of them in a couple days. For the veggies, make salads to use them up. For the fruit- make smoothies- yum!

This isn't really a recipe either, but lots of things that you normally make can be made more than one serving at a time and frozen.  Good examples are soups, chilis, lasagna, and most casseroles (like Mexican chicken, the filling for pot pies, etc.)  I cook them, then put into individual serving size plastic bowls and pop into the freezer.  They stay good for a while that way.  Just put them into the microwave when you are ready to eat them.  I also precook ground meat and put into individual servings bowls too.  I am a huge fan of the steam in the bag veggies/sides, and they don't have a whole lot in them.  You can also buy small cans or individual servings of some frozen veggies or sides.  Also, if you buy frozen veggies, you can use as much as you want at a time instead of having to use a whole can.
