These are AMAZING! We've had them 2 weekends in a row (bad, right?). You can definitely health-them-up by using turkey bacon and low-fat cream cheese. I definitely recommend cooking them on a raised rack to drain any grease. I also would change this recipe a bit by cooking them longer (until the bacon is really crispy). No matter what, though, they were SO good!

Thanks for posting this one!  I was eyeing these at the butcher shop on Sunday.  DH seemed a little bummed that I didn't buy a few- now I can make a batch (and probably for less).

I made these last night and they are awesome!  I am sitting in my cube thinking about eating them again- they were that good.  The only thing I would think about doing is using a 1/2 of a slice of bacon instead. I couldn't find really small peppers- my grocery only seemed to have big ones (like 3 in and fat) so I feel like they needed a bigger piece of bacon.

MsMac, I agree! We had the big fat peppers too, from our Farmer's market. I cut them into thirds width-wise (instead of lengthwise). I think they were better that way, and the smaller pieces of bacon worked well (as long as the bacon covers the open ends so all the cheese doesn't spill out).
