I went to an event in the sun and they supplied those mini evian spray bottles on ice for people- fantastic. Everyone enjoyed being able to mist themselves. They're not cheap, I think $3 a bottle but if you can afford them; they're quite useful.

I'm having an outdoor wedding in May, too. I think the selling point for my location was the native Oak trees that surround the venue. It provides shade, but still an open canopy for blue sky and sun (nothing extreme). My venue provides complimentary parasols for guests and the ceremony shouldn't take too long for people to feel overheated in anyway.

Parasols seem like a fun and practical way to keep cool. Not to mention, how fun will it look in the photos?

Just make sure you have a back up plan if it rains.  Outdoor lighting can't be beat especially at sunset!
