This is a recipe from my college roommate, that is super easy but yummy.
Poppyseed chicken casserole
Ingredients
4 chicken breasts
8 oz sour cream
1 can cream of chicken
half sleeve ritz crackers
1/4 cup butter (melted)
poppyseeds to sprinkle
Directions
Preheat oven to 350
Boil the chicken until it is no longer pink in the center
Let it cool, then shred into small pieces
Mix the shredded chicken, sour cream, and cream of chicken together, and pour it into your baking dish.
Crush the ritz crackers, and spread it on top of the chicken mixture.
Drizzle the butter on top, and sprinkle the poppyseeds.
Bake for 30 mins.
Sometimes I boil the chicken and shread it the night before, so that it will be a super quick dinner when I get home from work.
