GREAT INFO!  I have been wondering how we are supposed to preserve out top layer of our cake and have it not be gross when the time comes to eat it.  I think we will shorten the time and eat it on our 1 month.  Thanks for the very informative article.  Love the marshmallow idea.

I am still debating on if we should freeze it or eat it and have the baker make a new "moke" top for our 1 year aniversary.

Luckily a lot of bakeries will give you a free top tier cake on your one-year anniversary and you save yourself the freezer burn dessert :o)
