Home-made Cheez-it crackers
1 cup flour
4 tablespoons coldbutter, cut into small squares
1 (8-ounce) bag grated extra-sharp 2%
Cheddar cheese (preferably orange)
3/4 teaspoon
salt
1/4 teaspoon cayenne
pepper

put all ingredients into food processor and
pulse until crumbly

add water a TABLESPOON at a time until a nice
dough forms

roll dough into a ball, wrap in plastic wrap,
and chill in freezer for about 30 minutes

between 2 sheets of parchment paper, roll dough
out in about 1/8th inch thickness (the thinner, the crispier)

transfer dough onto parchement lined baking
sheet and using pizza cutter, cut into 1 in squares

using a toothpick poke a hole in the top of each
square (this keeps them from puffing up)

sprinkle with salt and bake for 25-28 minutes in
350 degree oven
