Spinach dips??

Anyone have a great recipe for a hot/baked spinach and/or artichoke dip???

Yes! I have an amazing one! This is a HUGE hit! No MAYO!

  • 1-package of frozen spinach thawed
  • 1-can of artichokes drained and chopped
  • 1/2- onion chopped
  • 1-bag of shredded mozarella cheese
  • 1-bag shredded of parmesan
  • 1-package of cream cheese
  • 1-6 oz sour cream
  • 1-stick of butter
  1. Preheat oven 375.
  2. In a large skillet melt butter, add onions and sauteed. Add spinach & artichokes. Add then the cream cheese in smaller pieces so it melts faster. Add 3/4 of the bag of Mozarella cheese (the rest will be used on top of the dip), add the sour cream, add the parmesan cheese.
  3. Now place everything in casserole dish. Sprinkle the top with the rest of the bag of Mozarella cheese. Put in the oven and bake until the top is melted.
  4. Serve with wheat thins or small pieces of baquettes sliced and toasted. YUM! Enjoy!

2 (minced) garlic cloves, 2 tblsp. minced onion, 1/4 c. EVOO, 1/4 c. flour, 2 c. heavy cream, 1/4 c. chicken broth, 2/3 c. grated parm., 2 tsp. lemon juice, 1/2 tsp. salt, 1/2 tsp. tabasco, 1/4 c. sour cream, 2 10 oz. (thawed & drained) boxes frozen chopped spinach, 12 oz. can artichoke hearts (drained & chopped), 1/2 c. mont. jack 

sautee onion/garlic 'til golden, stir in flour (cook 1 min.), slowly whisk in cream 'til boiling, stir in parmesan, lemon juice, tabasco & salt, stir 'til all cheese has melted, remove from heat, let cook 5 min., stir in sour cream, fold in spinach & artichokes, sprinkle monterey jack cheese on top.  Serve hot with tortilla chips.

Best one I know of is Emeril's from the food network site.  No mayo, nothing heavier in it than some cheese and milk actually, and it is to die for.  We've made it as a meal lol.

whichever recipe you choose...try chopping up some water chestnuts in it. So amazing!
