I made one of Rachael Ray's "30 minute meals" (it took me more like 45), but it was really good.

It was grilled scallops with angel hair pasta, tons of garlic, olive oil, parsley, lemon zest, lemon juice, butter, wine, and prosciutto.  I omitted the scallions just 'cause I don't like them.

Yum-O.

If anyone has her "365 Days" cookbook, it's #241.

Leftover Thai ground pork lettuce wraps that I made last night.  Really yummy!  Pork, garlic, shallot, jalapeno, cilantro, basil, mint, chili sauce, fish sauce, brown sugar, lime juice.  And you put it in lettuce cups...easy, healthy and good! :)

Last night we had baked chicken, lima beans, and baked mac 'n cheese. YUM-I LOVE baked mac 'n cheese. It was the first time I had made it myself, and I won't be going back to the instant kind anytime soon!

We had Deer Roast, Potatoes, & Carrots...all in the crockpot!! Delicous!

I love carrots slowly cooked in the crockpot. Any other way you cook them, I just don't like them. But from the crockpot they're so tender and good!

Last night we had to eat quick before I took Jade to her call back audition ...so it was McDonalds :)

 

But the night before we had Homemade mac and cheese with .....BACON in it! :)

Niecy!!! Two nights ago I had to make a quick meal and decided to just do grilled cheese sandwiches. I added bacon in honor of you! hahaha

last night, DH cooked a killer spagetti and meat sauce. sooo good!  he seriously has cooked more nights than i have since we got married!  i love it!  lol.  maybe i'll surprise him on Sunday with something awesome!
