They will definitely work with you on whatever you want. They do serve the food (buffet style but served into the guest's plates). This actually was very smart. It kept people from wasting food but they can always go back for more. They are also very professional. Sometimes a little slow to call you back by a day or so, but usually very responsive & definitely more so as the wedding date approaches. Superb chicken cilantro! Been in business for a while & do a great job! Had a friend who had italian dishes they wanted that the caterer had never made before & they did it perfectly!
