I started working with Roger and his staff April of 2007 but I have had conversations/emails with 5 or 6 other caterers and it did not go well with them. My daughter is in the Military, they had a dinner to promote Officers in 2005 and they had Canosa Catering do the meal. My daughter and her fiance were both at the dinner which was Prime Rib. My daughter asked for a business card but she lost it so I started looking for a caterer during the winter 06-07. I had several caterers contact me and they were expensive then I asked my daughter what was the name of that caterer. After a quick google search I found them. Roger insisted on doing a tasting right away for free so he brought Prime Rib with all the fixings to my home. My future in-laws, my daughter and future son-in-law and my husband had a great meal. Several weeks later we signed a contract and hired Roger. I did not hear from him in the fall and found out he had some health issues but he did call me in January. Roger and his staff have visited our home 3 times now always bringing a great meal. We are very confident that he and his staff will do a great job. If the food he has served us so far is any indication then its going to be great. Canosa Catering has made this process very easy and my family, this is one area we are not worried about.

"Our Story"
"From the time I was a teenager, I was cooking for family, friends & neighbors out of the kitchen in my house. In 1995 I quit my job, rented a small hole in the wall kitchen and started on my own for real, I called it "Rogers Quality Catering" (not a very good name). I would give free food out to anyone who wanted to try it including radio stations, schools & businesses, anything to get the word out. Local radio stations would give me a small plug every once in a while and things were going forward. Six months later, I rented a kitchen in a local nightclub and became their house caterer, that's when things took off. I would have been happy just doing party platters but I was shocked when I got the chance to cook for 500, 1000 or even 2000 people, it was great. I sat down with my friends and got the idea to just hire certified Chefs and not cooks. Most chefs are like me, no matter how busy you are you are always looking to fill your free time with more work so I hired 5 chefs part-time who still work for me today.
My mother is from a small town in Italy called "Canosa" which is located just outside the city of Bari in the DiPulia region on the east coast of Italy. So in 2001, I renamed the business "Canosa Catering" in honor of my family. All the recipes are from my mother so I know you will enjoy every bite just as my family has for many years."
