My sister's (now) Hubby did a similar concept to the e-ring while proposing. He went to a local baker who replicated a ring box (out of cake of course) and placed the ring in the middle (frosting over the hole) and completing the cake. I didnt get to see the final product but she said it was almost too good to eat :)
